BOAT (Basil, Onion, Avocado & Tomato) Sandwich

Yield: 1 sandwich
- 2 slices whole wheat bread
- 1-2 tsp mayonnaise or Vegannaise
- 5-6 leaves fresh basil, chopped
- ½ large ripe tomato, sliced
- A few thin slices of raw white onion
- ½ medium avocado, sliced
- ½ tsp balsamic vinegar (optional)
- Salt & pepper to taste
- Spread the mayonnaise on one slice of the bread. Spread the chopped basil evenly across the slice.
- Stack the sliced tomatoes, onion, and avocado on top of the basil. Drizzle with balsamic, if using, and sprinkle salt and pepper on top.
- Top with the second slice of bread, slice, and serve.
