Banana Bread

Yield: 16 muffins or one loaf
Ingredients
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • 2 eggs
  • 3 ripe bananas
  • 3 Tbsp milk
  • ½ tsp vanilla extract
Instructions
  1. Preheat oven to 350 F. Line 16 muffin cups with paper liners (or grease and flour a loaf pan) and set aside.
  2. Sift flour, baking soda, baking powder and salt together in a bowl.
  3. In a medium bowl or the bowl of a stand mixer, beat oil and sugar together. Add eggs and bananas and beat well. Add the sifted dry ingredients, milk, and vanilla. Mix until just combined.
  4. Divide batter evenly between muffin cups (or pour into loaf pan).
  5. If making muffins, bake 22-24 minutes, until tops spring back lightly when touched.
  6. If making a loaf, bake for 50-55 minutes until a knife inserted in the center comes out clean.
