Peanut Butter Cup Blondies

Let’s discuss my shortcomings. Or rather, let’s discuss ONE of my shortcomings, because we’ll need stuff to talk about in the future and I don’t have that many.

Humility, apparently, should be added to the list, but that’s not the one we’re talking about today.

The one we’re talking about today is my complete disorganization in all aspects of my life, specifically with grocery shopping. I make my list, spend about five minutes in the store halfheartedly attempting to stick to it, and then ripping it into tiny, confetti-like shreds, tossing it into the air, and running down the aisles with both arms out, theatrically sweeping everything that isn’t meat into my cart. I have fragmented thoughts of half-recipes while I’m doing it (“Coconut milk! We can have curry tomorrow! Butternut squash! I can make ravioli! Oh, white chocolate chips! I need those for…something.”). Then I get home and am confronted with the cold reality that I don’t have any curry paste to go with the coconut milk, I don’t know how to make ravioli, and I already have four bags of white chocolate chips – and I still can’t remember what I desperately needed them for.

Tomato & Roasted Red Pepper Soup

Soup – is it or is it not a meal? This is a debate as old as time, more perplexing than “to be or not to be,” more polarizing than pumpkin beer and candy corn combined. Can hot liquid, regardless of what it contains, stand up as a main dish? This hot-button issue was even the focus of a classic Seinfeld episode - Jerry owes Kenny Bania a meal (in exchange for a free Armani suit), but Kenny orders the soup and tells Jerry he’ll take the meal later.

Nutella-Stuffed Chocolate Chip Cookie Bites

Life’s all about balance, isn’t it? Balance between fun and obligation, between work and play, between family and friends and bills and chores and everything else we juggle each day. Balance has never come easily to me – some people are natural jugglers and others of us (hi!) are just more adept at tossing around one ball at a time. I tend to immediately lose my grip on something else whenever I pick up something new, but I try not to let that stop me from making new tweaks to the Jenga tower of life, because really, you can’t just do one thing at a time and call it living.

5 Minute Pumpkin Cinnamon Crescent Rolls

Yes, it’s that time of year – the leaves are turning (too early, if you ask me), the mornings are starting to get that delightful little nip in the air, and the entire world is obsessed with pumpkin. Myself included. This was my first pumpkin foray of the year, for a brunch at a friend’s house. They are incredibly simple, due to the cheat factor with refrigerated crescent dough (but you don’t have to tell anyone that), and they have all the warm, gooey appeal of a regular cinnamon roll, but with an extra pumpkin punch. Assemble in five minutes, bake in 15-20, and you’re good to go.

You can bring these to brunch, to work, or just pop them like candy in the privacy of your own kitchen. I highly encourage popping them like candy – it’s so easy to just whip up another batch when you do.

Tomato, Artichoke, and Hearts of Palm Salad

I did not like vegetables as a kid. I wasn’t crazy picky (wasn’t allowed to be) but I definitely was not one of those children that was gung-ho over a plate of broccoli. But for some reason, I loved hearts of palm – and my mom quickly figured out that if she threw some in a salad, I’d easily put away whatever else was there. I love it just as much now as I did then, and while I often throw together a salad for a quick dinner, I almost never do it if I don’t have hearts of palm around.
