Easy Zucchini Refrigerator Pickles

A quick refrigerator pickle made from zucchini.

Yield: 4 pint jars of pickles
Ingredients
  • 3 large zucchini, thinly sliced
  • ½ large white onion, halved and thinly sliced
  • 3 cloves garlic, thinly sliced
  • 2 Tbsp pickling spice
  • Several sprigs fresh dill
  • 1½ Tbsp kosher or sea salt
  • 1 cup apple cider vinegar
  • 1 cup white vinegar
  • ⅓ cup granulated sugar
Instructions
  1. Combine zucchini, onion, garlic, pickling spice and dill in a large bowl and stir to combine. Distribute mixture evenly in clean glass jars.
  2. In a medium saucepan, combine both vinegars, salt, and sugar. Heat on medium-low heat until salt and sugar is dissolved. Let cool for 20 minutes.
  3. Pour vinegar mixture into jars over zucchini. Put lids on the jars and refrigerate at least 3-4 hours.
