Peach Crumb Bars

Ingredients
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 3 cups all purpose flour
  • ¼ tsp salt
  • 1 tsp lemon zest
  • 8 oz unsalted butter (2 sticks), cubed
  • 1 egg
  • 5-6 medium-large peaches, peeled and diced
  • ½ cup granulated sugar
  • ⅓ cup cornstarch or tapioca starch
  • 2 Tbsp lemon juice
  • ½ tsp vanilla extract
Instructions
  1. Preheat oven to 375 F. Spray a 9x13 pan with cooking spray and set aside.
  2. Combine 1 cup sugar, baking powder, flour, salt, and lemon zest in a large bowl.
  3. With two knives or a pastry blender, blend in the egg and butter until the mixture is crumbly and in pea-sized chunks.
  4. Spread half of the mixture into the bottom of the pan and press down with the heel of your hand.
  5. In another bowl, mix together ½ cup sugar, cornstarch, lemon juice, and vanilla. Fold in peaches.
  6. Pour peach mixture over the bottom crust.
  7. Crumble the other half of the dough evenly over the top of the peach layer.
  8. Bake 45-50 minutes, until top is starting to brown. Cool completely, then cut into squares and serve.
Notes
If your peaches are extra-juicy, drain them before adding to the sugar-starch mixture. Leftovers note: these tend to get soggy overnight. If you can't finish them the day you make them (inconceivable!), reheating in a 300 degree oven does the trick to de-soggify them.
