Tomato, Artichoke, and Hearts of Palm Salad

An easy summer salad bursting with summer flavors.

Ingredients
  • ¼ cup balsamic vinegar
  • 1 can artichoke hearts packed in water
  • 1 small red onion
  • 6 stalks hearts of palm
  • 2 large heirloom tomatoes
  • Salt and pepper to taste
Instructions
  1. In a small saucepan over low heat, cook the balsamic vinegar until thickened and reduced by about ½ (3-4 minutes).
  2. Quarter the artichoke hearts and transfer to a serving bowl.
  3. Roughly chop the onion, hearts of palm, and tomatoes and add to the bowl with the artichokes.
  4. Season with salt and pepper and drizzle with balsamic reduction. Serve immediately.
