Oatmeal Chocolate Chip Pecan Cookies

Ingredients
  • ¾ cup (110g) all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp kosher or sea salt
  • 1 stick (4 oz) unsalted butter, room temperature
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (55g) granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • 1½ cups (165g) rolled oats
  • ½ cup chopped pecans
  • ½ cup semisweet chocolate chips
Instructions
  1. Preheat oven to 350 F. Line two cookie sheets with parchment paper and set aside.
  2. Combine flour, baking soda, and salt in a medium bowl and set aside. In another bowl or the bowl of a stand mixer, beat the butter and sugars together at medium speed until fluffy, about two minutes. Add egg and vanilla and beat until well combined, about 1 minute. Add the flour mixture and beat well. Add oats and beat to combine. Stir in pecans and chocolate chips.
  3. Drop dough onto cookie sheets in rounded tablespoonfuls. Bake for 10-12 minutes. Cool on cookie sheets for ten minutes, then remove to racks to cool completely.
