I can’t believe it’s almost May. We’ve had an absolutely glorious spring in DC (one week of 90+ degree temps notwithstanding), and I’m super grateful for it because all too often around here we go straight from frigid winter into unbearable summer heat. Having over a month of fantastic (and seasonally appropriate!) weather has been awesome and I’ve been taking every opportunity to get outside. I spent a good amount of Saturday reading outdoors, and Sunday started VERY early with a cheerleading session for two friends running the Nike women’s half marathon downtown. I’m a very good cheerleader. I brought this sign to help rally the troops:

Sigh. Will I ever learn to act right? Or my age? Burning questions, people. Anyway, my friends Emily and Wendy finished their 13.1′s with aplomb and I’m very proud of them, as well as the 15,000 other people who took the leap. The run. Whatever.

After all that standing around shouting at strangers, I was obviously exhausted. You think running a half marathon is hard? Try holding a cardboard sign in the air for hours. JUST DO IT. They don’t make commercials about that, but they should. Obviously I needed to go home and carbo load immediately. I wanted something easy, filling and maybe not entirely good for me, and hey, it’s still grilled cheese month. One of my favorite salads is a combination of spinach, dates, gorgonzola and walnuts, but there was no way I was eating a salad after watching all that running and vicariously burning all those calories. So I put the salad between two big fat slices of sourdough and called it an afternoon, because it couldn’t have possibly gotten any better. The pungent gorgonzola is perfectly complemented by the soft, sweet dates, mild walnuts, and crisp onion. HIGHLY recommend if you’re a gorgonzola fan like me. Or a sandwich fan. Or if you just ran a half marathon. Or just if you’re hungry.

Ingredients
  • 2 slices sourdough bread
  • 1 Tbsp unsalted butter
  • 2 tsp balsamic vinegar
  • A few thin slices of red onion
  • 1 handful baby spinach leaves, chopped
  • ⅓ cup crumbled gorgonzola cheese
  • 4 dates, pitted and chopped
  • ¼ cup chopped walnuts
Instructions
  1. Butter one side of each slice of bread and place buttered side down on a plate.
  2. Begin heating a grill pan or skillet over medium heat.
  3. Brush each slice of bread with balsamic vinegar. Layer onion, spinach leaves, gorgonzola, dates, and walnuts on one slice of bread and place the other slice atop it, balsamic side in, buttered side up. Place in heated skillet and cook, using a spatula to press down on the top slice, until the bottom slice is browned and cheese is melting, 3-4 minutes. Flip and cook another two minutes, until browned and hot. Serve immediately.

There is a long list of things I would never, ever know if I didn’t have a food blog. Seriously, a really long list. Here are just a couple of them:

  • Blogging software is like, crazy inept when it comes to food-related spellchecking. At least WordPress is. I cannot even tell you how many times I’ve been completely flabbergasted by a really common food/cooking word that it just doesn’t recognize. It’s to the point where I sometimes just skip spellchecking because the danger of the typo is less than the danger of me yelling at spellcheck yet again for having a really pathetic dictionary. Case in point: currently there is a red line under every instance of “spellcheck” in this paragraph.

  • Food blogging is a little like a cult. I am going to do an entire separate post about this because it’s that interesting. And also there is a lot to say about that and I need to get to the bullet point that’s actually relevant to this post. Which is…
  • …there’s a so-called “national” day, week, or month for EVERYTHING. Not kidding. Some are head-scratchingly specific, like National Hot Pastrami Sandwich Day, National Chinese Almond Cookie Day, or National Chocolate Covered Cashew Truffle Day. Others are much more generic - National Oatmeal Month (there are a LOT of food bloggers who love that one, I think), National Peanut Butter Month, National Egg Month. There are hundreds of these. If a food blogger wanted to, they could probably create all of their content purely based on the current food holiday/week/month. Broccoli-Cheddar Grilled Cheese

When you live in or near Washington DC, it’s impossible to not become embroiled in politics. The local news here is also the national news, and at this point, I don’t know (nor would I have it) any other way. Most of us are firmly entrenched in our beliefs from early childhood, and can argue any number of legislative issues as (or more) coherently than some of our elected representatives.

My first inauguration was Bill Clinton’s first, in 1993. I was twelve years old, and I really don’t remember whether I was enthusiastic about going. What I remember is losing my friend Jamie in the massive crowd – I think she decided she wanted hot chocolate, and who could blame her? I’ll never understand why the Founding Fathers decided to throw out a freezing mid-January date and make it a constitutional requirement  that the inauguration occur on that date. What’s wrong with May? Anyway, we spent most of the parade looking for her, and my parents have very different recollections of whether we found her or not. Either way, she survived and there was no harm done, but we didn’t take any family outings to inaugurations after that.

Nectarine Caprese Grilled Cheese

Yes, yes, I know that caprese by definition includes tomatoes, and that I’ve committed unforgivable sins against Italia by slopping some random substitute onto mozzarella, fresh basil, and balsamic, and then making it into a sandwich. But will you forgive me if I tell you how amazing it is and then tell you how to make it?

I knew you would. Thanks. You’re the best.

Stone fruits like nectarines and peaches are amazing with creamy mozzarella and peppery basil. I’m sure it would be great as a salad, but I’ve been eating a lot of salads lately so I’m coming from a place of “why would I eat something out of a bowl when I can slap it between two big fat slices of sourdough and heat it up?”

Okay, I’m not sure if that’s a real place. But this sandwich makes me not care. Grab a nectarine or two and enjoy one yourself!

Nectarine Caprese Grilled Cheese

Nectarines stand in for tomatoes in this sandwich variation on the caprese.
Ingredients
  • 2 slices sourdough (or other sandwich) bread
  • 2 tsp balsamic vinegar
  • 1 nectarine, thinly sliced
  • 2 oz part-skim mozzarella, sliced
  • ¼ cup fresh basil, chopped
  • 1 tbsp butter
Instructions
  1. Melt butter in a medium frying pan over medium-low heat.
  2. Brush the balsamic on the inside of both slices of bread.
  3. Place 1 oz of the mozzarella on top of the balsamic side of one of the bread slices. Layer the nectarine slices on top of the cheese and top with the basil. Place the rest of the mozzarella on the basil and top with the other slice of bread, balsamic side in.
  4. Transfer the sandwich to the frying pan and use another heavier frying pan (or grill press) to weigh down the sandwich. Cook for about two minutes.
  5. Flip the sandwich over and cook for another 1½-2 minutes, until bread is golden brown and cheese is melted. Serve immediately.

Individual Greek Pita Pizzas

Yesterday on my way to work, an SUV with the license plate “LIV SLO” blew by me on the right going about 85 mph. In a 50 mph zone.

Memo to Alanis Morrissette: that is ironic. Rain on your wedding day and traffic jams when you’re already late? Those things just suck (and yes, the lack of actual irony in that song has bothered me since I was a teenager).

And another memo to Mister LIV SLO: we’re all busy – always. We have work, and families, and social lives when we can, and daily annoyances that have to be squeezed in around those things. So as nice as it is to direct everyone to LIV SLO via your license plate, if you can’t even do it yourself, you may want to head to the DMV and swap that puppy out for a new plate. I would suggest “LIV FAST.” Or maybe “DIE HARD.”
